This chunky veggie marina is delicious on pizza or over pasta!
1 onion chopped
8 mushroom sliced
2 handfuls of chopped spinach
1 chopped zucchini
1 tbsp garlic powder
1 tbsp onion powder
2 tbsp high smoke point oil
2 small cans of plain tomato sauce
1. Heat your oil in a large skillet for a minute and then add your onions, cook for a couple minutes until translucent.
2. Add your mushrooms and continue cooking for a couple more minutes.
3. Add your zucchini and cook until it begins to brown.
4. Add your tomato sauce, spices and spinach, lower the heat and simmer for 20 minutes.
Pour over your favourite pasta, or use for a veggie pizza.
