Chunky Veggie Marinara

vegetarian marinara sauce

This chunky veggie marina is delicious on pizza or over pasta!

1 onion chopped

8 mushroom sliced

2 handfuls of chopped spinach

1 chopped zucchini

1 tbsp garlic powder

1 tbsp onion powder

2 tbsp high smoke point oil

2 small cans of plain tomato sauce

sea salt

1. Heat your oil in a large skillet for  a minute and then add your onions, cook for a couple minutes until translucent.

2. Add your mushrooms and continue cooking for a couple more minutes.

3. Add your zucchini and cook  until it begins to brown.

4. Add your tomato sauce, spices and spinach, lower the heat and simmer for 20 minutes.

Pour over your favourite pasta, or use for a veggie pizza.


Cashew & Chickpea Curry

This is a really simple and basic recipe for a delish curry.

1 small can chickpeas
1/2 onion diced
1 can coconut milk
1 can tomato sauce
3 tbsp curry powder
1 chopped sweet potato
1/2 head of cauliflower

2 cups cooked brown rice
1/2 cup cashews
Coconut Cream (optional)

1. Sauté onions
2. Add tomato sauce, coconut milk and curry powder.
3. Add chopped veg and chickpeas.
4. Simmer on low for 30- 45
5. Toast your cashews at 350F for 10 mins.
5. Serve with cashews and brown rice.
6. If you’ve got it top with a dallop of coconut cream, (just discovered this… It’s waaay better then sour cream)

* If you a bit of spice add some chilli flakes.
** The longer you can simmer your curry the better it will be, and make enough for leftovers, It’s ALWAYS better the next day!

Guacamole and Black Bean Wrap

guacamole, black bean, avocado, spinach, wrap, quesadilla

1/2 can black beans

1/4 shredded cheddar or daiya vegan cheese

1 whole grain or gluten free wrap

1 cup roughly chopped spinach

2 tbsp salsa

1/2 avocado mashed

Combine all the ingredients into a wrap and roll up, or if you like you can cook it quesadilla style by folding in half and cooking in a heated skillet.

Turkey Meatballs

turkey meatballs, healthy, sprouted grains

20 oz package of turkey

3 pieces of sprouted grain bread chopped

1/2 onion chopped

1 clove of garlic chopped

1 egg


2 tbsp grape seed oil (or other high smoke point, neutral tasting oil.)

1. Mix all your ingredients, easiest with a food processor but you can also mix the old fashioned way with your hands.

2. Heat your oil in a large skillet.

3. Form small turkey meatballs, they will cook more quickly and thoroughly.

4. Place your meatballs in your skillet and cook until firm, keep an eye on them and turnover once browned-I always test one meatball by cutting it in half.


GET your GREENS Pesto Sauce

avocado, basil, pesto sauce

2 handfuls spinach

2 handfuls basil

1/2 cup oliveoil

1/3 cup pine nuts

1 avocado (peeled and pitted)

2 garlic cloves

1/4 cup fresh parmesan OPTIONAL!! Or keep it vegan without the cheese, tastes amazing both ways!

sea salt to taste

Pulse for 3o seconds in food processor, or until smooth.
