Vegan Peanut Butter Cup so good you will die. Seriously.

1 cup natural peanut butter

2/3 cup coconut oil

1/4 cup natural sugar

6 pitted dates

3 tbs cocoa powder

1/4 cup chocolate chips

1. Melt the coconut oil (minus 2 tbsp) and stir in the peanut butter, turn off the heat and add the sugar.

2. Process the dates, chocolate chips, cocoa and 2 tbsp coconut oil in either a food processor or nutribullet. It should have the consistency of of putty if not add bit more coconut oil.

3. Fill foil cups 1/4 of the way with the Pb mix then freeze for 10 mins, after press in a layer of the chocolate date mixture then top with the remaining pb mix. 4. Freeze for an hour then transfer to the fridge.

Coffee Protein Smoothie

This protein shake is perfect for the coffee lover! I went through a period in the summer when I had one almost every day, you can use whatever instant coffee you want but the Starbucks Vias are the cleanest since it’s just micro ground coffee, another option is to freeze really strong coffee in ice cube trays and replace them for the regular ice cubes in this recipe.

1 cup almond milk

1 scoop vanilla protein powder

1 handful ice Blend baby blend.

DIY Granola

You’re never going to be able to buy a boxed granola that’s as good as the home made version. Even the organic brands generally use cheap oils and sweeteners and much more of it then what’s in this recipe. Plus  they never have very much of the more expensive and nutrient dense ingredients like nuts or dried fruit so basically by making it at home you’re going to have a better tasting granola for cheaper then the boxed stuff- and nothing beats warm granola over yogurt or with almond milk!

DIY GRANOLA

3 cups rolled oats

1/2 cup almonds (slivered or roughly chop your own)

1/2 cup walnuts (roughly chopped)

1/2 cup shredded coconut

1/4 pure maple syrup

1/4 grapeseed oil 1 cup dried fruit

a dash of cinnamon

**Feel free to sub whatever your preference in nuts, I love walnuts because they go great with maple syrup)

1. Heat oven to 250 F.

2. Combine all ingrediants except the dried fruit.

3. Line 2 baking pans with parchment paper, and spread a thin layer of granola.

4. Bake for a 1:15 mins.

5. Stir frequently.

6. Transfer to air tight container.

Guacamole and Black Bean Wrap

guacamole, black bean, avocado, spinach, wrap, quesadilla

1/2 can black beans

1/4 shredded cheddar or daiya vegan cheese

1 whole grain or gluten free wrap

1 cup roughly chopped spinach

2 tbsp salsa

1/2 avocado mashed

Combine all the ingredients into a wrap and roll up, or if you like you can cook it quesadilla style by folding in half and cooking in a heated skillet.
